Beef Tajine

Ingredients 2 lbs ground beef
1 can green peas
4 tbsp minced garlic
3 cups minced parsley
2 cups bread crumbs
3 onions, chopped
1 cup of water
1 cup of Gruyere cheese
8 fresh eggs
4 hard boiled eggs
salt and pepper to taste
1 teaspoon curry powder
1/4 teaspoon cayenne pepper (optional)
1 1/2 turmeric ground
2 bay leaves
3 tablespoon olive oil
1 tablespoon butter
Preparation Heat oil. Add ground beef to pan. Cook until all liquid has evaporated. Stir in onions, salt, pepper, curry poweder, turmeric, ground cayenne, pepper, and garlic. Cook until almost dry. Add water, cover pan, turn down heat and simmer for 45 minutes.

Add peas, parsley and bay leaves and continue to cook for 15 minutes on Medium/Low heat until sauce becomes a little thick and solid. Let it stand uncovered for 30 minutes. Add bread crumbs, eggs, cheese to the meat mixture.

Preheat oven to 350o F. Pour meat mixture into a pan, decorate with sliced hard boiled eggs and sprinkle with some shredded cheese. Add butter to cookie pan. Bake until the Tajine is firm (about 50 minutes). Remove the Tajine to a wire rack to cool for 10 minutes. Turn out to a platter, slice and serve.
